Breakfast On The Go – Yogurt Parfait

So I realize the idea of a yogurt parfait isn’t exactly groundbreaking, but it’s a healthy, filling and inexpensive meal to make for breakfast. All spring and summer long, I’ll switch it up with different varieties and combinations of fresh fruit and different types of yogurt. Sometimes i’ll add in granola or roasted mixed nuts, coconut chips, or even *gasps* mini chocolate chips. =)

weck jar aloneTo pack your breakfast or lunch for an on-the-go meal, I literally cannot recommend Weck canning jars enough for making your commuter life easier (and no, no one is paying me to say this) I use the 10 oz. Weck jar to carry my breakfast to and from work each morning and I’ll usually fill it with oatmeal, yogurt, cereal, or even scrambled eggs that I can reheat when I get to the office.

Not only is this Weck jar adorably squat, but it is ridiculously functional because it’s got a wide mouth for easy filling, it’s dishwasher and microwave safe, and it seals really well so that nothing is in danger of leaking en route to the office. This is coming from someone who has shown up to work reeking like a salad bar because their container had burst in their bag as they dashed in between distracted tourists in Times Square. Never again.

To make this very simple parfait you will need:

  • 1/2 cup of yogurt (plain, greek, vanilla, whichever kind you prefer)
  • 1/2 banana, chopped
  • Handful of blueberries
  • Handful of granola (homemade is a lot cheaper)
  • 1 tsp of cinnamon
  • Weck jar or other reusable container to take on-the-go

yogurt tablegranolaSimply layer the yogurt, followed by the cinnamon, then spoon the granola over it. Next add the chopped bananas and fresh handful of blueberries.
